Easy Pita Pizza

I’m excited to bring my first food related post to this blog! I enjoy cooking & baking especially, but I don’t do it often. Some days though, the inspiration strikes, & I’m trying something new! My pita pizza is a result of one of those days where I was feeling extra creative. I must say that I came up with something pretty darn good in the end!

Although this recipe doesn’t really resemble a pizza, I like calling it so because I really like how it sounds. The ingredients are very basic, and you customize it anyway you like.Today’s main ingredients are an egg, salami, & parmesan cheese. For me, the egg & the pita base are the most important parts. Otherwise, you can do whatever you want. When I had pesto on hand, I would use that as a base under prosciutto, which is my favorite combination.

I start with a ready made pita bread that will fit in my toaster oven. I don’t think I’ll be making homemade pita bread anytime soon! If you do make your own, I would recommend not baking it all the way so that when you broil your pizza in the end, it doesn’t run the risk of getting burned. I crack my egg and have it fall in the center or in between any air pockets, so I don’t have egg white running everywhere.

Next, I place my meat or whatever toppings I have around the egg. Then I'll add a bit of parmesan cheese, but not too much as they get pretty crispy in the oven. Before putting it in the oven, I top it off with a bit of salt and pepper.

I stick the pizza in the toast oven on the top rack under the broil setting, which for me goes for 450 degrees, for about 8-9 minutes. My toaster oven doesn’t a preheat alert (its worst quality!!), so that’s why I just put it in the oven straightaway. It’s really easy to burn and overcook the yolk if you’re not paying attention, especially in the last few minutes. I check every once in awhile to make sure the yolk is still loose while waiting for the egg white to firm up. When I take it out of the oven, I like to sprinkle on more parmesan cheese straight away so it melts a little. The best part about eating it is getting to the yolk and having it crack open onto the rest of the pizza! #yolkporn ;)

And there you have it, one of my favorite easy and versatile meals using my limited skill set! What have you been cooking up recently?
